I plug in my headphones and LoopStack is still defaulting to the phone speaker. All other apps coming through headset. Not sure what the issue is.
Also, glad to see a forum. Just 2 days ago I posted a comment saying these products could really use a community driven site and BAM, here it is.

There's using the same sound code...apart from the microphone obviously.
I'm on the HTC wildfire s and I've got the same problem, the headphones work for everything else but when I try to use them with loopstack the sound still comes out of the phone speakers all be it a little quieter. I haven't got Caustoc

I'm not sure what's happening on the Wildfire but from what I hear, the app doesn't really run correctly. Apparently there is only one track visible instead of the 4, as well as various other bugs (like the microphone one you mention). I'm afraid it looks like the app is just not compatible with the Wildfire, I'll have to adjust the market filters... :-(
I have the same problem on the HTC Legend. Simply cannot hear anything when headphones are connected, which is obviously a major problem. Extremely frustrating as the app looks so good! Would really love to see this fixed.
Have you tried other apps which offer recording and playback such as TapeRecorder or FourTracks or Audio Evolution Mobile?
I'm pretty sure this bug is with HTC as it only happens on a handful of their devices. Motorola had a similar problem and fixed it via a software update.

I just got around to trying FourTracks and you're quite right; it will not playback the recorded tracks while recording new ones. Damn it. looks like I need a new phone.

I ask as I have a similar problem with Caustic (appreciate its the wrong thread but the same problem). Works fine with or without headphones until I plug in the M-Audio Mini Keystation via OTG cable. Once connected the sound comes out of the speakers regardless until I disconnect the keyboard.
Obviously its a bit of a shame as a big part of the appeal to me.

Not really, this issue is in the firmware, I have the same issue on my HTC One. Actually I just tried with the Google Play ROM ( i was on HTC Sense last time I tried) and the bug is still present so it's probably a low-level driver issue.
Not much I can do from my end I'm afraid. Have you tried with the stock headphones that came with your phone. Some Googling turned up answers that if you use the play/stop buttons from your headset (or hold play for 3 seconds) it tells the phone to use them instead of speakers.. I'm not sure where mine are so I can't test right now, but it still sucks that it ignores headphones when they're clearly plugged in.
There is an app i use called "soundabout" and experimenting with it might solve your problem
